Route 81 – the old bus route which was used for 91 years as from the 1920s, to transport thousands of Maltese and tourists from the City of Valletta to Saqqajja Hill in Rabat. Combining this with the belief that “good food starts from its root”, was the inspiration for the name of this charming restaurant – Root 81. Nested on the side stairway leading up to Rabat, enjoying impressive views stretching from the blossoming greenery of Verdala to the Northern Harbour District, is Root 81. This restaurant boasts an exciting menu that promises to satisfy, with food being served either on the breezy stairway itself or in the cosy inside space with flagstone tile flooring, dark oak tables and warm copper hues. The chef's philosophy is definitely gourmet; combining food and art, with appetizing local ingredients whipped into eye-pleasing creations. Opening a restaurant of his own has always been a dream which Chef Patron Robert Cassar thought would never materialise. Sheer determination combined with his passion for the art of food, along with his 14 years’ experience in some of the leading 5-star hotels and 5 AA Red Star restaurants have infused this unique culinary art.
